Since the beetroot have not been heated it retains 100% of its natural goodness. They are simply peeled sliced into thin slices and with the addition of garlic covered in water and Klodawska rock salt. Then left to naturally ferment where they soften slightly but do not lose their firmness and crunchiness. They are great as a snack in salads and soups and are perfect for a beetroot carpaccio.
